Biodynamic Community

The world's first biodynamic tequila distillery crowns the top of an extinct volcano in Los Altos de Jalisco. It is the heart of a new agro-tourism ecosystem and a community that weaves along a continuous corridor of sustainable agriculture and free-range.

The biodynamic community will be the home to an artisanal tequila distillery and a carefully tended extension of biodynamic agro-ranching, agro-tourism, hot springs, ranches, ethnobotany, regional cuisine from edible gardens, sale of homegrown products, a cultural center and school, artist residency and workshops of traditional crafts.

This wide-ranging project was developed from the observation and learning of artisanal techniques, the differentiating elements of the area and the honesty of the materials through a language that speaks of respect for a rich cultural heritage.

BIODYNAMIC DISTILLERY

As a temple placed in a quarry, the distillery is half-buried, with panoramic views to the valley and a relationship of containment and tension with the natural stone that surrounds it. This allows, on the one hand, an ideal molecular environment for tequila distillation, emulating traditional processes. On the other hand, it makes perfect use of the excavation materials, which will later be used in the small constructions that will populate the land.

The building is composed of a series of pillars and cylindrical structures — which blend with the large tanks — made of locally produced brick that hold a single fifty-meter diameter circular slab. The program is hidden inside the structures, allowing the guest to wander around a forest of pillars, evoking a temple. The tahonas and the copper still, two traditional stages of the distillation process, are illuminated under the Boolean openings of the structure, creating moments of expositive character.

In an operative and theatrical action, the agave piñas are thrown from the jimado area through a large conical funnel, placing them in the center of the space between the ovens; the distillation process develops radially from this point.

A large burnt wooden lattice embraces the construction, creating a protective barrier against the sun rays and filtering the light, as well as favoring the natural ventilation that provides the necessary environment for fermentation.

RANCHOS

With panoramic views to the valley and distributed along the hillside, the housing prototypes blend with the landscape, merging with it and integrating into the environment.

Inspired by the patio as the heart of traditional Mexican living, the stone base embedded in the mountain holds the most private areas of the house, which are articulated by patios and heavy stone walls, creating intimate and silent moments as well as cooling the temperature in the rooms.

A wooden structure of vernacular inspiration rises above the basement as a pavilion to shelter the activities of inhabitants, offering a view to the north over the large terrace.

HOSPITALITY / SHORT STAY ROOMS

A series of parallel walls of sculptural character are transversally embedded in the mountain slope. As a tribute to the region's memory, the discreet and vernacular construction integrates the mountain into the interior of the room.

Guests enjoy an extensive panoramic view to the north, while to the south, a more intimate patio provides privacy and a framed scenario of the mountain.

The simple and local-inspired construction system weaves the rooms together. The wide stone walls built with local materials and the continuous wooden cover evoke the nostalgia of the region and simulate the natural topographic curves of the place to merge with them. 

HOSPITALITY / LONG STAY CABINS

­­­To the west of the property, on a young forest hillside, the cabins are spread where the horizon can be glimpsed through the thin tree trunks.

Inspired by the traditional open 3-stones fire — a resource of great importance for the historical and cultural legacy of the communities in the area — the shelters are surrounded by pristine nature and their wooden façades blend in with the landscape, going unnoticed by hikers. In the dark, they merge with the forest and the light emanating from inside flutters like fireflies at night.

The pile system allows an easy set-up on any slope or type of terrain, and the narrow proportion seeks to avoid the existing trees, respecting the premise of having a minimal impact on the site.

WELLNESS AND APOTHECARY

Among Mesoamerican cultures, the temazcal had a ritual and healing purpose and a cosmological meaning. It represented the interior of the Earth and was a place of transition between the living world and the underworld. It was conceived as the entrance to the afterlife. 

This ancient tradition inspires the creation of small stone constructions distributed on both sides of the river. Some are embedded in the ground, others are open to the sky and all of them are hermetic in appearance evoking a pre-existence or ruin. They offer different experiences related to wellness and meditation through water and temperature.

Connected through a wooden pathway that links both sides of the river, these sculptural elements materialize as stone volumes lost in nature.

Through the open-air hot springs, the user transits between outdoors and indoors, experiencing the range of temperatures.

La primera destilería de tequila biodinámico del mundo corona la cima de un volcán extinto en Los Altos de Jalisco. Es el corazón de un nuevo ecosistema agroturístico y una comunidad que se teje a lo largo de un corredor continuo de agricultura sostenible y libre pastoreo.

La comunidad biodinámica albergará una destilería de tequila artesanal y una cuidada extensión de agroganadería biodinámica, agroturismo, aguas termales, ranchos, etnobotánica, cocina regional de jardines comestibles, venta de productos de cosecha propia, un centro cultural y escuela, residencia de artistas y talleres de la artesanía tradicional.

Este extenso proyecto se desarrolla a partir de la observación y el aprendizaje de las técnicas artesanales, los elementos diferenciadores de la zona y la franqueza de los materiales mediante un lenguaje que habla del respeto a un rico legado cultural.

DESTILERÍA BIODINÁMICA

Como un templo enclavado en una cantera, la destilería se desplanta semienterrada, con vistas panorámicas al valle y una relación de contención y tensión con la piedra natural que lo rodea. Esto permite, por un lado, un ambiente molecular idóneo para el destilado del tequila, que emula los procesos tradicionales. Por el otro, supone un perfecto aprovechamiento de los materiales de excavación, que se emplearán después en las pequeñas construcciones que irán poblando el terreno.

El edificio se compone de una serie de pilares y estructuras cilíndricas fabricadas de ladrillo producido en la zona —que se mimetizan formalmente con los grandes tanques— que soportan una sola losa radial de cincuenta metros de diámetro. Los servicios se ocultan en el interior de las estructuras, provocando que el recorrido se desarrolle entre un bosque de pilares, evocando un templo. Las tahonas y el alambique, dos etapas tradicionales del proceso de destilado, se iluminan bajo las bocas en booleana de la estructura, ofreciendo momentos de carácter más expositivo.

En un acto operativo pero con expresión teatral, las piñas de agave se arrojan desde la zona de jimado a través de un gran embudo cónico, que las posiciona en el centro del espacio entre los hornos, el proceso de destilado se desarrolla en sentido radial a partir de este eje.

Una gran celosía de madera flameada abraza la construcción, formando una barrera que protege de los rayos del sol y matiza la entrada de luz. Además de favorecer la ventilación natural que privilegia el ambiente necesario para la fermentación.

RANCHOS

Con vistas panorámicas del valle y distribuidos a lo largo de la ladera, los prototipos de vivienda se mezclan con el paisaje, fundiéndose con él e integrándose al entorno.

Inspirada en el patio como eje neurálgico del habitar tradicional mexicano. El basamento de piedra incrustado en el terreno alberga las zonas más privadas de la casa, que se articulan mediante patios y pesados muros de piedra, provocando momentos íntimos y de silencio además de frescura en las habitaciones.

Una estructura de madera de inspiración vernácula se eleva sobre el basamento a manera de pabellón para cobijar las actividades de sus habitantes, ofreciendo una vista hacia el norte sobre la extensa terraza.

HOSPITALITY / HABITACIONES

Una serie de cartelas paralelas de carácter y dimensión escultural se incrustan en la ladera de la montaña de forma transversal. En un homenaje a la memoria de la región, la construcción se presenta discreta y de inspiración vernácula y las cartelas integran la ladera de la montaña al interior de la habitación.

Los huéspedes disfrutan de una amplia vista panorámica hacia el norte, mientras que al sur, un patio de carácter más íntimo provee de privacidad y de vistas acotadas hacia la montaña.

El sencillo sistema constructivo de inspiración local teje las habitaciones entre sí. Los anchos muros de piedra construidos con materiales locales y la cubierta continua de madera evocan la nostalgia de la región y simulan las curvas topográficas naturales del lugar para perderse entre ellas. 

HOSPITALITY / CABAÑAS

Al Oeste del predio, en la ladera de un bosque de encinos jóvenes, las cabañas se dispersan donde el horizonte se vislumbra a través de los delgados troncos de los árboles.

Inspirados en el tradicional fogón abierto de tres piedras —un recurso de gran importancia para el legado histórico y cultural de las comunidades de la zona— los refugios se rodean de naturaleza inalterada y sus fachadas de madera se mimetizan con el paisaje, pasando desapercibidas para los caminantes. En la oscuridad, se funden con el bosque y la luz que emana de su interior revolotea como luciérnagas en la noche. 

El sistema en pilotes facilita su desplante en cualquier pendiente o tipo de terreno, y la proporción esbelta busca evitar los árboles existentes, respetando la premisa de tener un impacto mínimo en el terreno.

WELLNESS Y BOTICA

Entre las culturas mesoamericanas, el temazcal tenía una función ritual y curativa y un significado cosmológico. Representaba el interior de la Tierra y era un lugar de transición entre el mundo de los vivos y el inframundo. Se concebía como la entrada al más allá.

Este antiguo concepto inspira la creación de pequeñas construcciones de piedra que se distribuyen a ambos lados del río. Algunas incrustadas en la tierra, otras abiertas al cielo y todas en apariencia herméticas evocando una preexistencia o ruina, esconden en su interior diferentes experiencias relacionadas con el bienestar y la meditación por medio del agua y la temperatura.

Conectadas por un sendero de madera que teje ambos lados del río, estos elementos escultóricos se materializan como volúmenes pétreos perdidos en la naturaleza.

Por medio de las aguas termales que se contienen a cielo abierto, el usuario transita entre el exterior y el interior experimentando la variedad de temperaturas.
