Category: Restaurant or bar in a heritage Building Located in the Victorian cellar of The Ampersand Hotel, Apero is an intimate and modern Mediterranean restaurant designed by Dexter Moren Associates. The concept of the Apero is designed to allow the restaurant to stand apart from the hotel, with industrial finishes included throughout, featuring casted aluminium wall lamps and reclaimed timber dining tables. From street level, guests enter Apero via the newly installed brass-mesh staircase which guides you from the top timber tread to the high contrast tessellated floor. A feature chandelier shaped from intermingling aluminium rods illuminates a 5m tall cabinet of curiosities, creating an impact on arrival. DMA have created a flexible series of zones, such as the snug, which is tucked around the Victorian cellar arches. Bench tables can be used for communal breakfast service and later accommodate private dining. A marble bar runs along one side of the room which is lined with tub leather bar stools and hanging overhead are a series of glass pendants with exposed filament bulbs. The original brick walls and low level lighting make the overall atmosphere sophisticated yet relaxed, appealing to both houseguests and locals.
