Mondrian Bordeaux Les Carmes | Philippe Starck

All Bordeaux residents are familiar with the sumptuous stone façade stretching across the 81, cours du Médoc. Built in 1871, the Hanappier and Calvet winery was extended ten years later by architect Charles Brun in the neo-Gothic style.

This is the building as it appears today, with its thirteen crenellated bays framing the main entrance and a gable bearing the United Kingdom’s coat of arms set above the arched doorway - a nod to the city’s historic commercial links with the British Isles.

And so, for two centuries, the building was at the beating heart of the wine trade in this area intrinsically connected to its industry and art. The Garonne River flows nearby, facilitating global trade and exports of fine wines, cognac and brandy stored in the twenty-two vaulted cellars lit by gauze spouts. In 1966, however, a fire destroyed the cellars housing a century's worth of grands crus classés.

In 2018, the Pichet family entrusted the property to creator Philippe Starck, who, accompanied by Jean-François Le Gal (architecture firm Advento), renovated the historic facade and created a refined five-star hotel that extends it and houses an elegant Japanese-inspired restaurant, a true link between past and future, West and East.

Tous les bordelais connaissent la somptueuse façade qui étire ses pierres blondes au 81, cours du Médoc. Érigés en 1871, les chais Hanappier et Calvet s’agrandissent dix ans plus tard sous la houlette de l’architecte Charles Brun dans un style architectural néo-gothique. C’est le bâtiment tel qu’il apparait aujourd’hui, avec ses treize travées couronnées de crénelage qui encadrent l’entrée principale et sa grande porte en arc brisé surmontée d’un pignon portant les armes du Royaume-Uni et sa devise : « Dieu et Mon Droit », témoin des étroites relations commerciales entre Bordeaux et l’Angleterre : le vin, breuvage noble s’il en est, mérite tous les honneurs.

Le bâtiment va donc, deux siècles durant, devenir le coeur battant du négoce vinicole dans ce quartier qui lui est entièrement dédié. La Garonne coule à deux pas, favorise les échanges et les exportations aux quatre coins du monde de vins fins, cognac et brandy entreposés dans les vingt-deux caves voutées éclairées par des becs de gaze. Mais un terrible incendie détruira en 1966 les chais hébergeant un siècle de grands crus classés.

Rebâti, le lieu abritera un temps une table gastronomique, la Table Calvet, avant d’être confié en 2018 par la famille Pichet au créateur Philippe Starck qui, accompagné de Jean- François Le Gal (cabinet d’architecture Advento), en rénove la façade historique et réalise un hôtel cinq étoiles raffiné qui la prolonge et dans lequel se niche un élégant restaurant d’inspiration japonaise, véritable trait d’union entre passé et avenir, occident et orient.
