PAN: AM NAVAL winning project of the fifth Oaxacan architecture biennial 2023, is a commercial project designed with the main objective of integrating, linking and connecting the program of needs, with open spaces as a large “park”, where the streets and urban areas of the context enter the center. through an avenue that crosses from the initial front limit of the site to the back, creating squares, patios, terraces and semi-covered spaces, which generate a diversity of environments. Each of these configurations is designed to adapt to the functionality of the services and the different needs of users.
The architectural program established different scenarios to address the complexity that a gastronomic site requires today, offering spatial quality through design.


The pedestrian access in the front part of the property links the adjacent avenue to the interior of the project.
The main setting in this place is the bakery, which provides direct service through a large bar that displays the product for user selection.
The colorful, sloping, high-rise roofs are the result of a reinterpretation of the toothed structure of a “food factory” and those of a “local cabin” in the Oaxacan mountains.
In front is a first spatial void that creates a plaza designed as a “Pet Friendly” space, where people can bring their pets and enjoy the products.


Taking the internal avenue of the complex in the central part, is the “cabin”, a cozy volume that reinterprets the cabin where the company started, creating a room that can be occupied with multiple uses. Next to this space is the hot and cold kitchen, which manufactures all the gastronomic elements.
In the central rear part is the second plaza-terrace that makes the volumes breathe.
Surrounded by vegetation, there is the chassis of a Volkswagen that has given identity to this square, facing the toilet pavilion. While in the back right side, there is a large gallery and children's play area.


In all covered spaces, there are variations in size and shape of the covers, depending on the use of the space. They all rescue the typology of the first branch, also having warm materials inside, sloping ceilings, exposed brick walls, wood, reused metal sheet painted in different colors, handmade pasta floors designed with figures of bread, polished apparent cement varied vegetation and a large delimiting fence with figures alluding to the bakery.


The creation of this new complex was significant from the design process, reinterpreting the elements that have accompanied the brand in an innovative and contemporary way since the old bakery, adapting the new contemporary needs of its users and remembering its history.


All these elements together express the eclecticism and gastronomic variety of PAN:AM, having different textures, colors, shapes, sensations and scales in both the food and the spaces.
