In the heart of the beautiful city of Morelia, within a 19th-century mansion, emerges a gastronomic oasis that combines the culinary origins of Mexican culture with oriental concepts. Josafat Zalapa restaurant was born from the idea of creating a disruptive atmosphere when sitting down to eat, drawing inspiration from the Japanese word "Omakase," which signifies "I trust you" or "chef's choice." Through a unique experience, diners embark on a culinary journey, immersing themselves in the preparation of their dishes.


The user experience begins with access to the historic property, where guests are welcomed by a corridor and gallery, leading to a courtyard adorned with various artworks along its perimeter. In the center, a sculptural piece with dead vegetation alludes to the passage of time within the building.


The architectural program consists of two rooms adjacent to the interior courtyard, flanked by baroque architectural elements. The main space houses a sculptural bar with 20 designer chairs, while subtly revealed on one side is a second room with a bar. Upon entering the restaurant, the massive quarry walls enclose the centerpiece of the project: an elongated bar where patrons gather around the chef, preparing for the culinary spectacle.


Through interior design, the project achieves a balance between the architecture of the past and contemporary elements expressed in the furniture, decor, and materials, creating an introspective, elegant, and sober atmosphere.


The bar concept further emphasizes the dishes prepared by the chef, while indirect lighting along the floor edge frames the existing quarry walls, highlighting the layers of history accumulated over time and preserving their architectural value.


The design premise was to respect the architecture of the place, subtly intervening in the interiors to achieve a timeless proposal that blends with the building's historical layers. The material selection remained essentialist, integrating wooden floors and pigmented cement coatings on the walls.


During the intervention, emphasis was placed on lighting design and furniture integration, resulting in the design of each element, from the linear lamps accompanying the bar to the chairs where diners savor their food.
