Sando is a Japanese inspired burger bar located in Geneva, Switzerland. The term Sando comes from the Japanese word ‘Sando-icchi’ or sandwich, which is traditionally served on bread called 'Shokupan'.

The spatial design process involved the renovation of an existing burger restaurant in the same location. Given that many of the functional needs of the space had already been met, the project centered around the precise demolition and renovation of key elements within the space to reflect Sando’s identity.

The Japanese concept of “boro boro” was at the forefront of the design process, which refers to materials that have been repaired or stitched back together to create a multi-layered patchwork effect.

Inside the space, a large bar is clad in brushed stainless steel and draws inspiration from omakase counters, creating a strong relationship between diners and staff. The bar is punctuated by a series of hanging textiles with Sando’s characters stitched onto them, fabricated with recycled fabric by Lundi Piscine.

Eight bar stools in natural, brown and dark stained birch line the bar, while a table height counter wraps in front of the windows on the opposing side of the space. The design references traditional Japanese ramen counters and is fabricated with alternating panels of natural and brown stained birch, matching wood tones throughout the project.

It is the re-working of an existing element, stitched together with surgical demolition, alterations and additions, that creates the unique patchwork that is Sando.

Sando est un bar à burgers d'inspiration japonaise situé à Genève, en Suisse. Le terme Sando vient du mot japonais "Sando-icchi" ou sandwich, qui est traditionnellement servi sur du pain appelé "Shokupan".

Le projet de rénovation avait pour site un restaurant de burgers déjà existant. De ce fait, étant donné que la plupart des besoins fonctionnels de l'espace avaient déjà été satisfaits, le projet s'est concentré sur la démolition et la rénovation d’éléments clés de l'espace afin de donner vie à l’identité spécifique de Sando.

Le concept japonais de "boro boro" a été un fil conducteur tout au long du projet. Ce concept fait référence à des matériaux qui ont été réparés ou recousus pour créer un effet de patchwork.

À l'intérieur de l'espace, un grand bar est revêtu d’un plan de travail en inox brossé et s'inspire des comptoirs omakase, créant ainsi une relation forte entre les clients et le personnel. Le bar est ponctué par une série de textiles suspendus fabriqués à partir de tissus recyclés par Lundi Piscine et sur lesquels sont cousus les lettres de Sando.

Huit tabourets de bar en bouleau de trois différentes teintes bordent le bar, tandis qu'un comptoir à hauteur de table s'étend devant les fenêtres. Ce comptoir fait lui référence aux comptoirs de ramen japonais traditionnels et est fabriqué avec des panneaux alternant du bouleau vernis naturel et vernis brun, assortis aux tons du bois que l’on retrouve dans l'ensemble du projet.

Ce sont tous ces éléments de patchwork qui donnent à Sando son caractère unique.
