DZE grand-bistro is a restaurant of Georgian cuisine, reflecting modern gastronomic trends, at the same time not losing its national identity. It’s immediately noticed upon opening its doors. While working on the project, we decided not to recreate the architectural images of Tbilisi, but to convey the spirit and soul of this city. One of the design elements of the DZE grand-bistro interior is colorblock: careful work with two intense colors that are very important for Georgian culture. The first color is terracotta: the color of the local soil and brick of Sololaki district of Tbilisi, pottery and kvevri — the cultural foundation of Georgia. The second color, cobalt, rhymes with the traditional lurji supra tablecloth; DZE tables are also decorated with blue patterns as a sign of hospitality and respect. The colors of the earth and the sky are united in the recognizable image of stained-glass windows — one can admire their special light on sunny days. The heart of the DZE grand-bistro is the family, and it is not without reason that most Georgian surnames end in -dze. The symbol of the family is a huge tree, the tree of life, the prototype of which was a thousand-year-old plane tree from the city of Telavi. However, this tree is connected not only with Georgia, but also with our city. After all, it was recreated from fragments found on the Krasnoyarsk reservoir, where village houses were located, and each had its own family history. The DZE tree brings together stories, generations and countries in a patio where the whole family can gather. It is a restaurant with enough space for everyone — he himself is like a wide, generous, bright soul of Georgia.
