Zú is the abbreviation of Zumárraga, surname of the owner of the establishment. For many years, the owner has dedicated himself to import the best foods for different restaurateurs. Formerly called La Finca Grill, a small establishment on the outskirts of Merida, this love and passion for food and for serving people became what it is today.

Zú is not a restaurant, it is a theatre created to tell stories through food and spaces conceived for contemplation; it is a constant struggle between cosmopolitanism and regionalism, where balance generates a unique identity. The dishes are global, with a regional essence rooted in the hands of Yucatán; they are the main actors and the space is the stage used to delight spectators with culinary stories from each corner of the planet.

Depending on the spectator and the sensation sought, Zu offers different scenarios. This is achieved by generating different atmospheres through various combinations of materials, heights and furniture. Privacy plays an important role within the establishment for which, there are elements such as lattices and screens that protect users from natural sunlight and from the sight of other diners.

This culinary theater is capable of telling several stories with the same dishes as the scenarios change. Depending on where the diner is seated, the establishment will be able to offer different sensations, providing the place with a dynamism that invites you to return and witness another story.

On the ground floor there is a doublé height área contained by a box of white brick, an open enviroment where spectators are regularly families. Right next to it is the bar, a cozy space surrounded by wood, in which the lightning and musicalization invite young diners; regularly couples or groups of friends. 

On the upper floor there is a low height área that has the possibility of closing to serve private events. The lattices of regional aesthetics stand out, reminiscent of the textile weaving present in the huipil, typical dress of the yucatecan women. Lattices in the upper level can be opened or closed, depending if there is a private event taking place there, or not. This project is full of different materials and colors dedicated to the gastronomic delight. Its balance generates a unique identity, with dynamic atmospheres to tell stories in which diners want to participate.
