DÖLLERER'S GENUSSWELTEN | Architect and Friends

IT - L‘edificio principale dei Döllerer si trova nella piazza del mercato di Golling, incastonato in mezzo a tanti altri. Tutti i lotti si presentano stretti verso la piazza e molto profondi. Questa vicinanza li rende molto bui e non permette alla luce del giorno di entrare all’interno degli edifici. Fortunatamente negli ultimi anni la famiglia ha avuto l‘occasione di acquistare le due case a fianco, posizionate a destra e a sinistra. Uno degli aspetti più importanti che abbiamo cercato di curare durante la progettazione è stato quindi proprio quello di portare finalmente nei Genusswelten due elementi che sono mancati totalmente fino a quel momento: luce e verde. Demolendo la vecchia casa disabitata sulla destra abbiamo potuto aprire tutta la facciata dell‘ edificio esistente verso sud. Cosí anche la roccia, che scende dalla montagna „entra“ nel nuovo giardino con terrazza e arriva quasi fino in piazza. Un privilegio che nessuno prima ha potuto avere a Golling. Il nuovo edificio, reso meno profondo dal nostro progetto, funge da elemento divisorio tra il giardino e la strada con l‘„Alpine Bar“ posizionato al piano terra aperto su tutti e due lati e con le dieci camere e junior suites sovrastanti. La nuova situazione ci ha permesso di riorganizzare tutto il piano terra partendo dal „centro della delizia“. Così abbiamo chiamato il vecchio tavolo in rovere nella hall fin dal primo schizzo che abbiamo fatto. Da qui parte tutto: il tavolo di grandi dimensioni, punto di riferimento storico per le famiglie della zona alpina, luogo d‘incontro dove si parlava, mangiava e ci si trovava con gli amici ed i vicini e ci si scaldava davanti al camino a legna - cosí abbiamo voluto ricrearlo noi. Tutte le zone, il ristorante ubicato nella vecchia posizione della marcelleria, il wirtshaus ampliato, la reception e l‘„Alpine Bar“, sono collegate tra di loro tramite la hall grazie ad un disegno molto aperto caratterizzato da zone tranquille e punti d‘incontro vivaci. Incontrare degli amici o business partners, chiacchierare con una persona della famiglia Döllerer o con un vicino, assaggiare una salsiccia fatta in casa o degustare un menù a cinque portate, rilassandosi in giardino o davanti al camino, concedersi un bicchiere di vino al bar, assaporare la stupenda vista che si gode dal nuovo centro benessere, dormire in una delle camere nuove... Tutto questo sono i nuovi „Döllerer‘s Genusswelten“ e il frutto del nostro lavoro, svolto negli ultimi due anni. EN - Situated on a market square in a fully enclosed building context, all the plots are very narrow and deep letting nearly no daylight into the buildings. Luckily during the last couple of years the family acquired the neighbouring houses on both sides of their hotel. One of our main design ideas was to bring the missing light and greenery into the hotel. By pulling down one of the old outdated neighbouring houses we opened the facade southwards bringing daylight to nearly all areas of the existing building. Also a garden with terrace for the new restaurant and bar, which is the first in Golling, could be realized in our designs. This has a spectacular view over the rock walls coming down from the mountains behind the market square which are nearly invisible from the street. The new building, related to the local context, is not as deep as the old one was, but offers enough space to house the new ‘Alpine Bar’ on the ground floor, ten guest rooms and junior suites on the upper floors that have great views over the garden and the castle of Golling. This new situation allowed us to completely re-organize the ground floor where everything is centred on the ‘table of delicious treats’, an old oak wood monastery table located in the middle of the new hall. Traditionally in the alpine region there has always been a large table where families came together or invited their friends and neighbours with the comfort of a warming fire place. All the main areas like the restaurant, the traditional Wirtshaus, the reception area and the bar are connected to each other through this central space with its very open yet intimate layout, creating more quiet areas and niches and also meeting points full of life. Over the past two years we have succeeded in redesigning and redeveloping whilst maintaining the Döllerers family’s soul and traditions. Meeting friends or business partners, chatting with the Döllerers or the neighbours, eating homemade sausages or a five course gourmet menu, relaxing in front of the fireplace or in the garden, enjoyingying great Austrian wines in the Alpine Bar, enjoying the spectacular view over the Alps from the new spa, spending a weekend in one of the new guestrooms. DE - Mitten im Salzburger Land, weder in der Stadt Salzburg, noch in einem der zahlreichen Skiorte in der Umgebung zu arbeiten, machte das Projekt für uns sehr spannend. Einer der Entwurfsansätze war, den weitgereisten Gästen den Ort, die Tradition der Familie sowie die wunderbare Umgebung wiederentdecken zu lassen, indem diese Gewohntes wohlwollend wahrnehmen und viel Neues entdecken können. Das Hauptgebäude der Döllerers befindet sich am Marktplatz von Golling in geschlossener Bauweise, wodurch alle Grundstücke schmal und tief sind und nur wenig Tageslicht ins Gebäudeinnere dringt. Glücklicherweise konnte die Familie in den letzten Jahren die beiden Nachbarhäuser links und rechts neben dem Stammhaus erwerben. Das wichtigste Entwurfsziel für uns war, endlich Licht und Grün in die Genusswelten zu bringen, also das, was bisher fehlte. Indem das rechte unbewohnte Nachbarhaus abgerissen wurde, konnte die gesamte Fassade des Haupthauses Richtung Süden geöffnet werden. So wurde in den Entwurf auch der Felsen mit einbezogen, der hinter dem Haus vom Hang herunterragt, in einen Garten mit Terrasse übergeht und damit fast bis zur Straße reicht. Die Erweiterung des Hotels, ein weniger tiefes Gebäude als der Altbestand, wird zur Verbindung zwischen Straße und Garten. Sie schafft Platz für die Alpine Bar im Erdgeschoß sowie zehn Gästezimmer und Junior Suiten mit tollem Blick auf den Garten bzw. die Burg Golling in den oberen Stockwerken. Die sich daraus ergebende Situation erlaubte uns, ausgehend vom `Zentrum des Genusses`, wie wir den zentralen alten Eichenholztisch in der Halle vom ersten Entwurf an nannten, den Ablauf im Erdgeschoß vollkommen neu zu organisieren. Das Zuhause, in dem Familien an ihrem großen Tisch, wie früher typisch für diese Region, zusammenkommen konnten oder sich mit Freunden und Nachbarn am Kamin aufwärmten - So wollten wir es auch. Alle wichtigen Bereiche wie das neue Restaurant, in der alten Metzgereiproduktion untergebracht, das erweiterte Wirtshaus, die Rezeption und die Alpine Bar sind durch einen sehr offenen, von beruhigten und belebten Zonen geprägten Grundriss miteinander verbunden. Freunde oder Business Partner treffen, mit einem der Döllerers oder einem der Nachbarn plaudern, eine der hausgemachten Würste oder ein fünfgängiges Gourmet Menü geniessen, sich vor dem zweiseitigen Kamin oder im Garten erholen oder ein Glas österreichischen Wein an der Alpine Bar verkosten ... all das ist es, was den “Döllerer in neuem Gewand” ausmacht, den wir in den letzten beiden Jahren erarbeitet haben.
