Cidrerie La Face Cachée de la Pomme (eng-fra)

ENG - In keeping with the inventiveness, pioneering nature, and innovative and contemporary vision of terroir invoked by François Pouliot and Stéphanie Beaudoin, the founders of La Face Cachée de la Pomme (LFCP), the firm Fournier, Gersovitz, Moss, Drolet et associés architectes (FGMDA) designed the renovations to the cidery – the sales and production facilities and the family residence.

In 1994, François Pouliot, then a movie producer, acquired the orchard in Hemmingford, in the Montérégie region, and contributed to the creation of the very first ice ciders. In 1998, he and Stéphanie Beaudoin, at the time a visual artist, founded La Face Cachée de la Pomme, an cidery that quickly put forward its innovative vision of terroir and found international acclaim for its top-quality ice cider.

In 2001, Pouliot and Beaudoin wanted to expand and renovate the ancestral house and their small cidery situated in the orchard; they contacted Giovanni Diodati, architect with FGMDA. From 2001 to 2009, as the company constantly grew and new facilities were needed both for production and for hosting visitors, the initial project for renovating and modernizing the residence became a three-phase holistic project in which architecture, landscape architecture, interior design, and graphic design were considered jointly to make Neige, LFCP’s innovative ice cider, a success.

With the years and the expansions, FGMDA designed all of the needed renovations and extensions to the ancestral house and the cidery, respecting the Scottish-inspired vernacular architecture and the industrial architecture of the farm facilities, merging them with a resolutely modern, contemporary architectural language. Inspired by farms in southern Italy, the architects designed the residences and farm facilities to create a unity that is both aesthetic and functional, in which each space can have multiple uses. For instance, the yard can be a dock for unloading merchandise or be transformed into a tasting area for visitors. Designed to preserve the privacy of the family living on the property, the grouping blends harmoniously into the landscape.

The design of the shop and the tasting areas, warehouses, and offices integrates the notions of fluid circulation and efficient operation. Using materials such as stone, recycled barn wood, and the facade’s untreated wood – a reference to the crates used to transport apples – FGMDA ensured unity of the whole respect for the architectural vocabulary, and highlighting of the existing structures.

In keeping with LFCP’s philosophy, sustainable development is part of the framework of the project, integral to both the facilities and the production processes. Particular attention was paid to the lighting; natural light was emphasized, even in the warehouses – an unusual practice that required raising employees’ awareness. Less costly, this passive lighting strategy is also beneficial for the quality of the workplace environment.

For 30 years, from project to project, and from award to award, the architects of Fournier Gersovitz Moss Drolet et associés architectes have maintained a vision of architecture as major stakeholder in the preservation of heritage and cultures, and they combine with the present the faces of the past that make up Quebec. In 2011, the firm won a Certificate of Excellence awarded by Mission Design to projects that make a major contribution to design excellence and the economic development of Quebec, for its involvement in the building and renovation of the La Face Cachée de la Pomme cidery. In 2010, FGMDA received an award of excellence for the preservation of a heritage complex or building, given by the Canadian Association of Heritage Professionals, for the renovation of the auditorium of the FACE school in Montreal, Quebec.


FRA - En accord avec l'inventivité, le caractère pionnier et la vision terroir novatrice et contemporaine de François Pouliot et Stéphanie Beaudoin, les fondateurs de La Face Cachée de la Pomme (LFCP), l’atelier Fournier, Gersovitz, Moss, Drolet et associés architectes (FGMDA) signe les réaménagements de la cidrerie - installations de vente et de production et la résidence familiale.

C'est en 1994 que François Pouliot, alors producteur de cinéma, acquiert le verger à Hemmingford, en Montérégie, et collabore à l'élaboration des tous premiers cidres de glace. Rejoint en 1998 par Stéphanie Beaudoin, alors artiste en arts visuels, ils fondent La Face Cachée de la Pomme, une cidrerie qui très vite affirme sa vision novatrice du terroir et impose son cidre de glace haut de gamme sur la scène internationale.

Dès 2001, François Pouliot et Stéphanie Beaudoin souhaitent agrandir et rénover la maison ancestrale et leur cidrerie naissante sis dans le verger et contactent pour ce faire Giovanni Diodati, architecte de l'atelier FGMDA. De 2001 à 2009, poussé par l'essor constant de la compagnie et les besoins d'aménagements inhérents à son succès, tant en termes de production que d'accueil des visiteurs, le projet initial de rénovation et de modernisation de la résidence évolue vers un projet en trois phases à l'approche holistique, où architecture, architecture de paysage, design intérieur et design graphique sont pensés conjointement pour faire de Neige, le cidre de glace innovant de LFCP, une réussite.

Au fil des ans et de la croissance, FGMDA a conçu tous les réaménagements et extensions nécessaires à la maison ancestrale et à la cidrerie, en respectant l'architecture vernaculaire d'inspiration écossaise et l'architecture industrielle des installations agricoles, tout en les fusionnant dans un langage architectural résolument moderne et actuel. Inspirés de certains ensembles agricoles du Sud de l'Italie, les architectes ont conçu la résidence et les installations agricoles de manière à créer une unité à la fois esthétique et fonctionnelle, où chaque espace pourrait se prêter à des usages multiples. Ainsi la cour peut-elle servir de dock pour déposer la marchandise ou se transformer en salle de dégustation pour les visiteurs... Pensé pour préserver l'intimité de la famille qui vit sur les lieux, l'ensemble se fond harmonieusement dans le paysage.

En outre, la conception des espaces boutique et dégustation, entrepôts et bureaux intègre les notions de fluidité de la circulation et d'efficacité des opérations. En utilisant des matériaux comme la pierre, le bois de grange réutilisé ou encore le bois non traité de la façade, véritable clin d'œil aux caisses de transport des pommes, FGMDA veille à l'unité de l'ensemble, au respect de la grammaire architecturale et à la mise en valeur de l'existant.

En accord avec la philosophie de LFCP, le développement durable fait partie de la trame même du projet, s'immisçant tant dans les installations que dans les procédés de production. Une attention toute particulière a été portée à l'éclairage, privilégiant l'éclairage naturel et ce, même dans les entrepôts - pratique peu usitée qui a même nécessité un effort de sensibilisation des employés. Moins coûteuse, cette stratégie d'éclairage passif s'avère aussi bénéfique pour la qualité de l'environnement de travail.

Depuis 30 ans, de projet en projet, et de prix d’excellence en prix d’excellence, les architectes de l’atelier Fournier Gersovitz Moss Drolet et associés architectes soutiennent une vision de l'architecture comme acteur majeur de la préservation du patrimoine et des cultures et conjuguent au présent les passés qui composent le Québec. En 2011, l'atelier se méritait un Certificat d’excellence décerné par Mission Design, distinguant les projets ayant fortement contribué à l’excellence en design et au développement économique du Québec pour son implication dans le bâtiment et l’aménagement de la cidrerie La Face Cachée de la Pomme. En 2010, FGMDA obtenait le prix d’excellence pour la préservation d’un complexe ou d’un édifice patrimonial, décerné par l’Association canadienne d’experts-conseils en patrimoine (ACECP) pour la rénovation de l’auditorium de l’école FACE, Montréal, Québec.
